Kolachy Cookie Recipe

Hello There,

Today I am going to be talking about kolachys. You’ve probably never heard of them. Well, you should, because they are so good (actually, how can a cookie be good? I think the proper term is yummy.) My mother has been making them since my oldest brother was one, so twenty years. Wow, that’s a long time!

Now you might be thinking: “why are they making Christmas cookies when it isn’t even thanksgiving yet?” Well, every year my family and I make about a dozen different kinds of Christmas cookies…. and them some (yep, no joke). So this year we decided to make some cookies in advance that way we aren’t rushing to finish baking before Christmas day.

And without further ado, here is the recipe (By the way, these are small, so warning: you will find yourself eating them one by one  and then all of a sudden you will say, “What!? Did I really just eat ten of those!?”)

Alright now for the recipe.

Cream cheese kolachys

2 sticks of butter

1-8oz. package cream cheese, softened

2 tbsp. sugar

2 cups flour

2 tsp. baking powder

1/4 tsp. salt

 

100_6231Thoroughly blend butter, cream cheese and sugar (I don’t have a professional camera so bear with me through these terrible pictures.)

 

100_6235Add flour, baking powder and salt, mix well. form in two balls (we doubled the recipe that’s why there’s four balls).

Wrap and refrigerate at least 2hr or over night. roll out the dough 1/4 inch thick on floured surface.

 

100_6238Cut out dough (we use a little heart cookie cutter, but you can use what ever you like.)

Make a depression in the center and add 3/4 teaspoon preserves (we use raspberry jam) or cream cheese filling.  place on ungreased baking pan. bake in 350 oven for 15 to twenty minuets. until slightly brown.

 

100_6236Cool on racks, sprinkle with powdered sugar, then eat. yum!

 

Recipe for cream cheese filling

8oz cream cheese

1/2 cup powdered sugar

2 tbsp.. milk

Beat all ingredients with hand mixture until creamy.
